Honey

Honey is sweetness.  Goodness.  Raw Honey is a living food.  Heat kills it. A probiotic, it is strengthening to the immune system.  Used as a wound dressing, it is antimicrobial.

Consider buckwheat honey or local honey to quiet coughs and soothe sore throats.  Rowan Jacobsen, author of Fruitless Fall, suggests “1-2 teaspoons before bed promotes deep, restful sleep.”  *Raw honey is not recommended for children under 2 years of age.

Flavors of honey.  When there is one abundant nectar source, it produces a particular flavor of honey.  Such as sourwood honey, lavender, rosemary, orange blossom honey.  Wildflower honey, clover honey.  Here in Georgia, the honey may be influenced by Tulip Tree (tulip/yellow poplar) which turns the honey a dark amber color with rich flavors.
